BNP Healthy Eating Week - Chilli Recipe

This week has been BNP Healthy Eating Week. On Monday Mr Richards spoke to us about the importance of eating nutritious food. During Thursday’s assembly, Mrs Hurley spoke about different helathy foods from around the world.

Mexican Chilli Beef with Chocolate, Sweetcorn Rice served with Tortilla Chips and Sour Cream

Ingredients

1 onion sliced thinly

½ small red pepper sliced

½ small yellow pepper sliced

500g minced beef

4 spring onions finely sliced

125g fresh coriander

1 400g tin of chopped tomatoes

1 teaspoon Cajun spice

100g rice

Small tin of sweetcorn

Small tin of kidney beans

Tub of sour cream

25g dark chocolate

Vegetable oil

Tortilla chips

 

Method

1.   In a large bowl, mix minced beef with Cajun spice. Leave to marinade for an hour.

2.   To make the chilli first fry off the onions in the oil until soft. Add the minced beef and cook until browned.

3.   Add peppers and cook through until the peppers are soft.

4.   Add the kidney beans and stir through. Combine the tinned tomatoes and stir until the chilli starts to simmer.

5.   Stir in fresh coriander, spring onions and gently add chocolate. Allow to melt then simmer very slowly for 5 minutes.

6.   The rice can be cooking along with the sweetcorn.

7.   Serve the chilli with sour cream and tortilla chips.

8.   Enjoy together!
